Observation (CORRECTED DURING INSPECTION):
1) Foods in the sliding glass cooler measured 7C.
2) Ingredients by the line cooler stored at room temperature.

Foods in the above noted violations have been moved to working coolers at the time of inspection.
Corrective Action(s):
1) Move all foods into working coolers. Do not use this cooler until it has been repaired.
2) All potentially hazardous foods must be stored at 4C or colder. Move all ingredients into working coolers. Either have a smaller amount of ingredients and discard the items within 2 hours, or keep the ingredients on ice.

Observation (CORRECTED DURING INSPECTION): Pot of stock/soup measured 30C at the time of inspection
Corrective Action(s): Foods must be hot held at 60C or above. Staff re-heated the soup/stock to boiling.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Handwashing station at the front area had a basket in the basin. Hot water supply was not turned on at the time, as it is leaking.
Corrective Action(s):
- Handwashing sinks must ONLY be for handwashing and nothing else.
- Hot water must be available at all times. Fix the leak as per the previous inspection. Sink is securely attached to the wall. This must be repaired by the next routine inspection or further enforcement action will be taken.

Observation:
1) Raw meats were stored on top of vegetables
2) Many items uncovered in the coolers and freezers, bucket of potatoes and onions uncovered in outside storage area
3) Raw meat was being thawed in the sink compartment next to where charred meat was being cooled
4) Lotus roots were being peeled by a staff member outside the premises
Corrective Action(s):
1) Raw meats must be stored underneath ready to eat foods
2) All items must be covered with lids to prevent cross-contamination
3) Do not process raw meat at the same time as cooked meat in such close proximity to prevent cross-contamination. Process cooked meat first, clean and sanitize the area before processing raw meat.
4) All foods must be processed inside the facility

Observation: Due to the broken lid, the chest freezer in the prep area behind the chest freezer is unable to maintain -18C. Foods inside measured -1C.
Corrective Action(s): Do not use this cooler for long term storage. Repair or replace this cooler.

Observation: Bucket of opaque mop water in the back area outside the premises
Corrective Action(s): Dispose of mop water in a sanitary manner as soon as cleaning is complete. Do not have standing water as it will attract pests.

Observation:
Mould and food debris observed:
- in the sliding glass cooler in the kitchen area
- in the walk-in cooler
- in the glass door freezers outside
Corrective Action(s): Clean and sanitize the areas noted. This is repeat infraction.

1) Sliding glass cooler measured 7C
2) Chest freezer (in prep area behind the cash counter) lid is broken and does not close properly.
Corrective Action(s):
1) Repair sliding glass cooler so that it is able to reach and maintain 4C
2) Repair or replace the freezer lid.
