Observation (CORRECTED DURING INSPECTION): Bonito soup improperly cooled -medium sized pot on the counter at 37 deg C been there over an hour as per operator

60 deg C to 20 deg C within 2 hours: using ice/cold water bath // ice wands // small containers to quicken the process
Step 2:
20 deg C to 4 deg C within 4 hours: place in the fridge

Observation: Numerous mouse droppings throughout the restaurant:
-near the back door on the floor next to fridge
-dry storage -floor, all shelves
-next to stove on the floor
under the bar counters where the sauce buckets are

Numerous food bags -curry mix- in dry storage adulterated by the rodents

NOTE: business was closed for about 3 weeks and just reopened today.
Corrective Action(s): Close the business immediately

Discard all adulterated foods
Clean and disinfect (with bleach sanitizer) all shelves and containers (food cans, hard plastic containers)
In dry storage room place all soft packaged foods such as paper/soft plastic/nylon packaged foods in rodent proof containers (lids on tight)

Have your pest control come in for inspection after you are done all the cleaning and reorganizing for an inspection either today or tomorrow

Operator called their pest control while onsite -Abell Pest Control scheduled to come in at 4-5pm. Have their report ready for the follow-up inspection
