Observation (CORRECTED DURING INSPECTION): Food contact surfaces sanitizer not readily available close to the food preparation areas. Sanitizer spray bottle was stored in the janitorial room.
Corrective Action(s): Ensure at least one sanitizing spray bottle or bucket is available in proximity for each food preparation area. Manager labelled and provided sanitizer spray bottle at each area.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 1. Hand washing stations located in the kitchen and bar area were not provided with any single use paper towels.
2. The hot water tap for the hand washing station at the end of the cook line was broken and unable to be turned.
Correction: 1. Provide paper towels at each of the hand washing station. Hand washing stations must be properly stocked at all times.
2. Service / fix the hot water tap to ensure hot running water is provided at aforementioned hand washing station.
Comments

Follow-up inspection:
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- Broken hot water tap at the hand washing station was not fixed at the time. Staff repaired the tap at the time of inspection.
- Low temperature dishwasher dispensed 100 ppm bleach sanitizer.
- Glass washer dispensed 12.5 ppm iodine sanitizer.
- Dirty knives were stored in a container of water. Manager stated dirty knives will be kept here until clean and sanitized by dishwasher.
- No opened can food observed on site.
