- staff received training on adequate wash, rinse, sanitize for sinks and food contact surfaces
-Hose stored inside a bucket under sink, dry storage of products moved to the back
-hand washing sink accessible
-Lamb noted being defrosted in enclosed bags under cold running water
-Ribs is covered in walk in cooler
-All foods are covered , labeled in walk in cooler and freezer
-Deep cleaning is done for noted areas
-No cardboard noted in use in walk in cooler
-Walk in freezer is being defrosted and clean, non slip mat is being used
-Dedicated sinks and prep tables (lableled) as:
1. vegetables
2. Meat
3. seafoods- 2 compartment sinks between kitchen and wask in freezer, Noted: Plastic curtain between the kitchen and sink access: Operator will put a hook to move curtains to slide when the sink is n use
-Antimicrobial treatment - Not in use until further information from the area inspector
** Violation ticket is waived this time due to the efforts noted by the operator to rectify issues.
