Observation (CORRECTED DURING INSPECTION):
- Quats sanitizer in white container with wiping cloths stored in solution concentration ~50ppm.
- No quats sanitizer available for use in preparation area just outside of the walk in cooler.
Corrective Action(s):
- This quats sanitizer solution is to sanitize food contact surfaces and equipment along the main food preparation line. Ensure the concentration is at 200pm. Do not put in towels that are soaked with water into the freshly dispensed quats sanitizer. This will cause the quats solution to be diluted. Management must check quats sanitizer concentration on a regular basis using test strips.

- Preparation area also to be provided with a 200ppm quats sanitizer solution at all times.

Observation (CORRECTED DURING INSPECTION): At the time of inspection hand sink at the bar not provided with single use paper towels. Hand sink at the end of the main food preparation line paper towels not placed in the holder.
Corrective Action(s): Ensure all designated hand sinks are provided with liquid soap and single use paper towels in holders/dispensers.
