Observation (CORRECTED DURING INSPECTION): At the time of inspection no approved food contact surface sanitizer solution prepared and available for use.
Corrective Action(s): Ensure during operation a 100ppm bleach or 200pp quats sanitizer solution is prepared and available for use. General sanitizer solution: 1 oz of regular unscented bleach to 1 gallon of water.

Observation (CORRECTED DURING INSPECTION): Lack of proper hand washing by staff working in the kitchen.
Corrective Action(s): Ensure staff wash hands whenever raw potentially harazrdous foods are handled, use the bathroom, handle garbage, wash dishes, or any other times hands become soiled.

Corrective Action(s): Ensure all food products are protected from contamination at all times. Cover food products and store all dispensing utensils outside of food products. Correct immediately.

Preparation cooler inserts and lower section at or below 4 degrees C.
2 door freezer at -11 degrees C. Monitor and ensure -18 degrees C.
Under the counter cooler at 4 degrees C.
Hot holding at or above 60 degrees C.
Storage area freezer at -9 degrees C. Unit in defrost cycle.
Dishwasher registers 50 ppm chlorine during the final rinse cycle.
After correction, 100ppm bleach sanitizer solution available for use. Reminder to store all wiping cloths in this solution when not in use.
Front display cooler at 3 degrees C.
Serving area hand sink provided with liquid soap and paper towels.

Reminder to monitor and record temperatures of all coolers, freezers, hot holding, and dishwasher final rinse cycle chlorine concentration.
