Observation (CORRECTED DURING INSPECTION): Trays for dough were being placed inside the mop sink.
Corrective Action(s): Trays were removed and then washed, rinsed, and sanitized in the two-compartment sink. DO NOT place any trays directly inside the mop sink. This is reserved for waste water ONLY.

Observation: A) Multiple areas need to be addressed for sanitation:
- Edges of all three cooling rack shelving are saturated with old oil and grime
- Mould has started to form along the walls of the walk-in cooler
- Back shelving of the walk-in cooler has accumulated a mould-like substance which needs to be cleaned off

B) Ceiling tiles are starting to accumulate oil and dust. The tiles above the walk-in cooler are starting to crack.
C) Dish drying racks are accumulating a large amount of grime
Corrective Action(s): A) Throughly clean and degrease all of the cooling rack shelves. Remove the mould-like substance from the walls of the walk-in cooler and all shelves at the back of the cooler. Date to be corrected by: February 11, 2019

B) Broken / dirty ceiling tiles to be replaced by March 28, 2019

C) Drying racks are to be replaced by March 28, 2019

Observation (CORRECTED DURING INSPECTION): 1. Light in walk-in cooler has burnt-out.
2. Door frame of the walk-in cooler and the rubber seal is in poor condition.
Corrective Action(s): 1. Replace the light bulb. Date to be corrected by: February 11, 2019
2. The frame of the walk-in cooler and the rubber seal need to be repaired. Do not use "masking tape" as a solution. Date to be corrected by: March 28, 2019

Comments

Routine inspection conducted. The following observations were made:

1. Temperatures
- Walk-in cooler at 2C
- Prep cooler at 4C at bottom
- Prep cooler at approximately 6C at top during the inspection. You must keep the lid closed when not in use. Adjust the cooler so that the cooler at the bottom is at 2-3C, so that the top can remain at 4C at all times
- Beverage cooler at 4C
- Chest freezer at -18C
- Hot-holder warmer at >=60C
- Temperature logs maintained and up-to-date. However, no logs were produced for the pizza hot-holder. Create another column for the hot-holder

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach spray bottle x 2 available at approximately 200 ppm
- Pizza trays are generally in satisfactory sanitary condition, stored at front-of-house after being cleaned and sanitized

3. Storage
- All food products stored at least 6" off the floor
- Generally, items are kept covered and protected from contamination

4. Pest Control
- No recent, visible signs of pest activity at time of inspection

5. Administrative
- Permit posted
- Owner has FoodSafe 1
