Observation (CORRECTED DURING INSPECTION): 12 eggs in tray stored at room temperature. Temperature was 19C. No time stamp/control in place at the time of the inspection.
Corrective Action(s): Manager discarded eggs at the time of the inspection. Ensure staff are adhering to food safety procedures.

-General sanitation of premises satisfactory
-Handwashing stations supplied with liquid soap and paper towel in kitchen/dishwashing/cafe areas and liquid soap and air dryers present in staff washrooms/changerooms.
-Cooler and cold holding unit were 4C or colder
-Walk-in freezer was -12C
-Fries held in dispenser were -12C
-Wall mounted freezer adjacent to fry area -8C. *Check seal/gasket to ensure freezer is closing properly and frozen temperature is maintained.
-Food in hot holding units were >60C
-crispy chicken 72C
-grilled chicken 74C
-Stirring spoon in cafe area stored in ice water
-Dishwasher functional and met sanitizing requirement. 100ppm chlorine detected on dish after cycle in dishwasher. Test strips present for checking chlorine residual.
-100ppm chlorine present in buckets where bar towels stored. Stamps present to indicate time for solution to be replaced.
*New multi-surface peroxide cleaner/disinfectant present and in use. Manager reported it is used for non-food contact surfaces only. Updated info cards with instructions for use of this product not present and out of date wall card (showing use on prep line) still posted. Procedures should be available for staff to refer to, to ensure correct application. Operations Consultant to look into up to date procedures.
