Corrective Action(s): Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Follow recommendations advised by Pest Control Company Technician.

Observation: Dishwasher malfunctioning. Staff aware of broken dishwasher and using three compartment sink method for washing of dishes. Sinks were set up with appropriate levels of detergent and sanitizer as well as sink plugs.

Corrective Action(s): Dishwasher is to be repaired immediately. Technician has been called and according to staff will be at restaurant today to make necessary repairs.

NOTE: Proper manual dishwashing methods were observed today substituting for dishwasher therefore no objections for facility to use manual warewashing methods until such time as dishwasher is repaired. WELL DONE.
NOTE: Time stamping needs improvement. Follow food safety plan.
