Observation (CORRECTED DURING INSPECTION): Diswashwer did not reach 71C at plate surface, nor did it reach 50ppm clorine at plate surface. Operator to wash dishes in dishwasher and will sanitize with 200ppm chlorine bleach solution in sink for 30 seconds as temporary solution
Corrective Action(s): Operator to ensure that dishwasher is in good wroking condition at all times.

Routine Inspection:
- Hot/cold water, liquid soap, and paper towel available
- 200ppm chlorine bleach available in sanitizer bucket **ensure to have sanitizer available at all times
- Walk-in and preparation cooler was 4C or lower
- Freezer was -18C or lower
- Hot holding units were 60C or greater
- Milk was stored on ice
- Ice machine was in good condition
- Operator is keeping tags and records for shellfish
- Dry storage was in good condition **ensure to not use any cans that are dented**
- No evidence of pest activity was observed during inspection
- General sanitation and cleanliness was adequate
