Dishwasher looks clean. Chlorine residual at 100 ppm ok. Cooling units all less than 4 C. Hot holding units all above 60 C. Walk-in freezer looks clean and organized. Back storage area looks generally clean and well organized. Back wall with historic and ongoing ponding water problem - dry. Problem solved. ** Wall to be fixed and wall rot to be removed. OK. Looks much better. New mop sink installed. Area is generally much drier. Very minor fruit fly population and very localized to beverage station in front. Much better.
