Observation (CORRECTED DURING INSPECTION): Dishes not being properly sanitized by dishwasher.
Corrective Action(s): Use 2 compartment sink to wash/rinse/sanitize with bleach and water. Fill one compartment of your sinks with a mixture of bleach and water (1 tsp bleach per 1 liter of water). Do NOT use any dishes (takeout containers only). please note that this is ONLY a temporary solution becuse you do not have a 3 compartment sink which is required for regular manual dishwashing.

If your dishwasher is not repaired by the follow up inspection, your facility will be closed until it gets repaired as you cannot operate without a working dishwasher.

Observation: High temperature did not reach 71 deg C minimum at plate level after rinse cycle. Was informed that dishes had been recently run through, so after waiting 15 minutes, another try was given. However, dishwasher only achieved 68 deg C. Then, repeated tries after this only resulted in 67 deg C and eventually 65 deg C on rinse cycle.
Corrective Action(s): Have dishwasher either serviced, repaired, or replaced. It need to consistently reach a minimum of 71 deg C at the plate level at the end of the rinse cycle.
