205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: 1) Boxed eggs stored in service hallway found to be 17C. Operator claimed eggs were just delivered.
2) Prep cooler located in front service area for the grill found to be 7.7C - 8.8C at inserts. Undercounter cooler temperature at 3.7C.
Corrective Action(s): 1) Return eggs to supplier if eggs have been held above 4C for more than 2 hours or discard eggs. Do not store food items in service hallway.
2) Repair / adjust prep cooler so inserts are able to maintain cold potentially hazardous food items at or below 4C at all times. Recording of cooler temperatures stopped on October 9th. Follow your food safety plan and ensure temperatures are checked at least twice a day.

Observation: 1) Dirty food inserts and containers found stored in mop sink.
2) No bucket of sanitizer solution provided for wiping cloths in kitchen area or front service area.
Corrective Action(s): 1) Do not store used food equipment / containers in mop sink.
2) Provide sanitizer solution for wiping cloths in these areas. If bleach solution is used, do not use QUAT spray bottle on surfaces as well. Solution must be 100-200 ppm chlorine and changed at least once every 2 hours.

Observation: Did not notice staff washing hands at adequate frequency at time of inspection.
Corrective Action(s): Review best handwashing practices with staff. Gloves do not replace handwashing. Staff must still wash hands prior to wearing gloves.
