Comments

- Prep cooler unit located across from cookline has been repaired and was at 4C at time of inspection. Ensure all coolers are checked routinely throughout the the day and are maintained at 4C or less at all times.
- Sanitizer at bar area was at 200ppm quat in spray bottle and container with cloths submerged.
- No fruit fly activity noted in the back food preparation area and bar area, however some activity noted in corridor area where two compartment sink is located.
- Large insert lid in place to act as barrier to protect dry garnishes on the counter at the pizza area.
- Covers for lights in dough mixing area have been obtained
- AC has been fixed and is not leaking
- Orange juice machine has been removed from the premises. Pastry Chef advised that they will not be providing this item anymore as it attracted too many fruit flies in the bar area. Do not add any new menu items or make any operational changes without obtaining health approval (ie. food safety, sanitation plans and floor plan submission...etc required)
- Food safety and sanitation plans submitted have been reviewed. Incorrect information and inconsistencies noted on the last set of documents submitted still noted on revised copies. Pastry Chef to arrange meeting to go over food safety and sanitation plans.
