Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The low temperature chemical dishwasher is dispensing only 10 ppm chlorine during the sanitizing cycle at the plate surface.
Correction: This needs to be adjusted to dispense atleast 50 to 100 ppm chlorine during the final sanitizing cycle at the plate surface. Use the 3 compartment sink and perform manual warewashing until the dishwasher is fixed. DO NOT USE THE DISHWASHER.
CORRECTION DATE: Friday August 27, 2021.

- The low temperature chemical dishwasher is now dispensing 100ppm chlorine on the plate surface during the final rinse cycle.
- There are no other outstanding violations that require a follow up inspection.
- The operator can now start using the dishwasher again.
