Observation: A few rodent droppings and spilled cereals were found in the dry storage area.
Corrective Action(s): Disinfected areas with rodent droppings using spray sanitizer and wipe away droppings with a paper towels. Ensure dry storage area is kept clean and sanitary and all spilled foods are cleaned up immediately.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Siding by the dishwashing area is falling off due to excess water. Dishwasher is scheduled to be replaced in the next month.
Corrective Action(s): Once the dishwasher is replaced, allow the area to dry out and replace siding. Excess mould in the area may result in mould growth.

Comments

Facility has a main kitchen and three serving kitchens.

Main Kitchen:
-Walk-in cooler was at 3C.
-Walk-in freezer was at -13C.
-Cooler and freezer temperatures checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum 71C required for proper disinfection). Dishwashing wash and rinse temperatures recorded daily.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles properly labelled and tested at 200ppm. Quats sanitizer dispenser tested at 200ppm.
-Deli slicer properly disassembled and cleaned and sanitizer.
-Ice machine was found to be clean and sanitary.
-General food storage practices good at the time of inspection. Foods properly stored off the floor and covered.
-General sanitation satisfactory at the time of inspection. Ensure staff clean the walk-in cooler shelving units (underside) on a regular basis.

Serving Kitchen:
-Minimal amounts of foods stored in the serving kitchens.
-Cooler units were less than 4C.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Sanitizer spray bottles properly labelled and tested at 200ppm.
*Temperature records for the 2nd and 3rd floor kitchens indicate numerous days where temperatures exceeded 4C/40F - review with staff proper procedures or corrective actions when critical limits are exceeded.

-FoodSafe Level 1 certificates issued prior to July 29, 2013 expire on July 29, 2018. To recertify, students must either successfully complete a FoodSafe Level 1 course or online refresher course (register at foodsafe.ca).
