Comments

Hand sinks provided with constant supply of liquid soap and paper towels.
Wiping cloths stored in sanitizing solution (100 ppm chlorine).
Walk-in cooler was at 1 deg C.
Freezers were at -15 to -19 deg C.
Hot holding for rice was at 80 deg C.
Low temp. dishwasher had chlorine residual of 100 ppm.
Temperature log was available. Last few days of October was not done.
-Ensure temperature log is up to date and clearly label the months on top of the sheet.
Dry storage and freezers were well organized.
Kitchen cook was wearing apron and hair restraint.
No signs of pests noted at time of inspection. Ensure to monitor for pests.
Back door has screen door installed.
General sanitation was satisfactory. Floor, walls, underneath equipment and prep tables were free of debris.
Note: Current ceiling tiles are old (porous and non-washable). However, they are in clean and in good condition.
They will need to be replaced in the future to meet current food code.
