Observation (CORRECTED DURING INSPECTION): At the time of inspection no bleach sanitizer solution prepared and available for use in the kitchen.
Corrective Action(s): Ensure during operation a 100ppm bleach sanitizer solution is prepared and available for use. Store all wiping cloths in this solution when not in use. General sanitizer solution formula: 1 oz of regular unscented bleach to 1 gallon of water.

- Store al food products at least 6" off the floor.

Dishwasher registers 50ppm chlorine during the final rinse cycle.

Kitchen 2 door cooler at 2-3 degrees C.
Preparation cooler inserts and lower section at or below 4 degrees C. Note: only small portions of cut mushrooms stored a room temperature. To be used within 2 hours then discarded.
Hot holding above 60 degrees C.
Back area 2 door cooler at or below 4 degrees C. 2 door freezer at -16 degrees C.
3 upright freezers and 2 chest freezers at or below -18 degrees C.
