Observation: Facility currently undergoing repairs and renovations. Observed dry wall missing from a wall partition and some sinks leaking due for repairs. Operator states repairs will take place in the next 2 to 4 weeks.
Corrective Action(s): Ensure to apply repairs and restore facility as per approved floor plan. Ensure food, food equipment and food contact surfaces are protected from contamination during renovations. Clean and sanitize equipment before use as needed. Correction required in the next month.

Observation: Containers of food such as cut mushrooms and ham in open bins in walk in cooler. Ensure all food containers have proper food grade covers and lids in storage.

Observation: Front service cooler at ambient 12C. Minimum inventory and potentially hazardous food stored in unit during rush and used up within 30 minutes. Food stored between 4C and 60C for more than 2 hours will need to be discarded. Operator has service technician coming today to fix unit.
Corrective Action(s): Ensure unit is repaired and can hold temperatures at 4C and below. In the mean time only use small amounts of inventory for cooking which can be used up in 2 hours or be discarded. In the mean time use working coolers for 4C and below food storage. Correction required in two days.
