Observation (CORRECTED DURING INSPECTION): Observed shaved chicken from rotate sitting in a stainless pot without proper hot holding. measured temperature to be at 45-57 C
Corrective Action(s): Required operator to keep all foods at 60 C or above at all times. Turned on the stove to apply heat for proper hot holding

Observation (CORRECTED DURING INSPECTION): Observed spatula for small grill on the side stored on top of a dirty surface

Observation: 1. Light fixtures still missing proper covers. this is a repeated violation.
2. Prep table in the back where a built-in sink used to be is covered with tiles to cover the hole. Operator stated that a cutting board is being used on top of the tiles when doing food preparation. Did not see a cutting board being used at the time of inspection and there were food items, a knife and food debris found on top of the tiles. Tile connections had large enough gap that makes it difficult to properly clean and sanitize
Corrective Action(s): 1. Must install proper light coverage. Incompliance will follow progressive enforcement
2. Tiles must be removed. Such surfaces makes cleaning and sanitizing very difficult.
