Observation: Drain stopper for third (sanitizing) compartment at three-compartment warewashing sink is not functional.
Corrective Action(s): Ensure drain stopper is repaired/replaced so that it is functional and capable of stopping water/liquid, in order for sink to be properly filled for manual warewashing procedures. Date to be corrected by: May 1, 2023.
Note: Reviewed interim warewashing procedures. Items are being washed in 1st compartment, and sanitized in 2nd compartment after being rinsed.

Proper thawing practices in use (items thawed under refrigeration).
Hand sinks are accessible and supplied with hot and cold running water, liquid soap, and paper towels.
Proper hand hygiene practices observed. Gloves are non-latex.
Quaternary ammonium compounds (quats) sanitizer available in labeled spray bottle and from dispensing unit at three-compartment sink at 200 ppm.
Hot and cold running water available at three-compartment sink.
Equipment and utensils stored in sanitary condition.
No signs of pest activity observed at the time of inspection.
Temperature and sanitation logs are maintained and up-to-date. Probe thermometer and sanitizer test strips available.
FOODSAFE requirements met at time of inspection.
Permit posted in conspicuous location.
