- Three compartment sink is available for manual dishwashing. Reviewed manual dishwashing procedures.
- 200 ppm Quat sanitizer is available
- Secondary cook step is done after slicing meat off the cone
- No signs of pests observed

Note:
- Keep prep cooler lid closed when it's not busy to help maintain temperatures ≤ 4°C.
- Recommend purchasing plastic containers with tight fitting lids for all dry storage products not in cans. This will help to prevent rodents from entering the restaurant as the food will be sealing in containers.
