Observation (CORRECTED DURING INSPECTION): Mandolin slicers were found to have food debris under the blades.
Corrective Action(s): Ensure slicers are properly disassembled for cleaning and sanitizing after each use to prevent potential contamination of foods. Reviewed proper disassembly procedures with operator. Slicers were washed and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): 1) Raw eggs were stored above vegetables.
2) Scoop was stored in a dry ingredient containers.
Corrective Action(s): 1) Raw eggs must be stored below and/or separately from ready-to-eat foods to prevent potential contamination of foods. Eggs were moved to the lowest shelf at the time of inspection.
2) Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Scoop was moved at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Screen door was not in place at the time of inspection.
Corrective Action(s): Ensure screen door is in place when the back door is open to prevent potential pest entry. Screen door was properly closed at the time of inspection.

Comments

-Follow-up inspection to April 27, 2023.
-Potentially hazardous foods and foods labelled keep refrigerated were stored in a cooler at 4C or less at the time of inspection.
-Operator stated rice scoops stored in water are changed every 2 hours.
-Did not observe foods stored on the floor at the time of inspection.
-Sushi cooler door seals have not been repaired or replaced but have been cleaned. If operator is able to maintain door seals in a clean and sanitary condition and temperatures are consistently at or below 4C, door seals can be repaired for the time being.
-Operator competed a FOODSAFE Level 1 equivalent course - valid until April 28, 2028.
