Observation: Front dessert cooler contained various pies stored at 10C (ambient), with an internal temperature of also 10C.

Corrective action: 2 pies prepared 4 days ago were discarded by employee at time of inspection. 1 pie prepared this morning was moved to the stand-up cooler in the kitchen that had an ambient temperature of = to or < 4C. Adjust the dessert cooler so that it can maintain a temperature of 4C / 40F or lower. Only non-diary beverages such as coke and beer are allowed in this cooler until a follow-up inspection has been conducted. Potentially hazardous foods must be stored below 4C (40F) or above 60C (140F) to prevent growth of bacteria that could cause foodborne illness

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Mulitple instances of unsanitary equipments were observed:
(1) Potato presser had food residue in the square grid.
(2) Deli slicer was not properly cleaned, with residue present under the slicer.
(3) Ventilation slats are greasy and need to be cleaned.
(4) Cabinet / fridge handles were greasy.

Corrective action: The following is required by you:
(1) Potato presser and deli slicer need to be cleaned and sanitized according to manufacture's instructions.
(2) Ventilation slats need to be cleaned and run through the dishwasher. Consider using degreaser to remove oil deposits first.
(3) Wipe down cabinet and fridge handles with a sanitized cloth.

Equipment must be in santitary condition to reduced the chance of contaminating food.

Observation (CORRECTED DURING INSPECTION): Food was not protected from contamination through the following observations:

(1) Buckets of fruits, and vegetables were left on floor and uncovered in walk-in cooler
(2) Food items including tuna bowl were uncovered in walk-in cooler
(3) Knives were observed soaking in sanitizing pail.

Corrective action:
(1) Elevate the fruit buckets off the floor (at least 6")
(2) Cover all foods in cooler to protect from contamination.
(3) Knives were removed from sanitizing pail. In the future, once knives have been properly sanitized, they should be stored in a clean location. Knives left immersed in sanitizer may contaminate food with sanitizer upon usage.

Observation: Flies were observed in kitchen area.

Corrective action: Ensure no flies are in kitchen area, and discuss control measures with a professional pest control company. Flies may contaminate food after landing on them.

Observation (CORRECTED DURING INSPECTION): Back screen door was wide open at time of inspection.

Corrective action: Screen door was closed by health inspector. Ensure it is closed at all times when not in use to prevent entrance of pests and flies which may contaminate food.

- Coolers were at 4C or colder except for front dessert cooler
- All freezers including walk-in freezer at -18C or colder
- Sanitizing pail contained 200 ppm chlorine. Employees reminded to keep sanitizing cloth immersed in pail.
- Quats dispenser dispenses 200 ppm quats.
- Dishwasher contained 50 ppm chlorine at final rinse cycle at the plate
- 2 handwashing sinks observed - one in kitchen and one at front counter. Both equipped with hot and cold running water, paper towels, and liquid soap.
