Observation (CORRECTED DURING INSPECTION): Syran wrap and syran wrap covered cardboards both used to line shelving under cooking line.
Corrective Action(s): Directed staff to remove. Both syran wrap and cardboards are not suitable cleaning material.

Comments

Cleaning completed in kitchen floor and fridges; dry storage room in the back reorganized.
Food and chemicals are stored separately. All food are lifted off the ground.
All items can be seen, reached safely and floor properly cleaned.
Please maintain this level of sanitation and organization as the correction order is in effect for 1 full year as explained.
*mould removal around caulking of two compartment sinks needed.
Leak has been repaired for dishwasher but repair company Key Food recommends unit replacement.
Please find a NSF approved dishwasher to be replaced asap; thermometer also needs to be replaced to test dishwasher.
Order thermo-labels from supplier.

Sushi rice tested with Fisher brand test strip showing pH between 4 and 4.5.
Please send sushi rice to get tested in order to determine actual value. Use sushi rice within 2 hours with time tracking until results return as explained.
Provide test results to health unit with recipe included.
