Thermometer required for dishwasher rinse temperature testing: hot holding, waterproof thermometer Records have been implemented, but MUST include dishwasher rinse temperature (or sanitizer if low temperature sanitizing) Keep all records on site for 3 months Note that your purchased test strips do not measure chlorine (bleach). You must purchase the correct strips if you wish to use them Also note that chlorine test strips (like mine) won't work on straight bleach as the concentration is much too high Manual addition of bleach to dishwasher rinse cycle resulted in 10-50ppm residual detected. Dishware is being manually washed prior to cycle in machine Follow up inspection tomorrow to verify repair of dishwasher
