Observation (CORRECTED DURING INSPECTION): Ice-machine had build up of mould on the walls of the chamber and the ice trays.
Corrective Action(s): Ice was discarded at the time of inspection. The chamber was emptied and the machine was turned off. Do not use the ice-machine until it is thoroughly cleaned and sanitized.
Maintain sanitation logs to ensure routine sanitation.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizer was too strong in all sanitizer spray bottles. The test strips were being bleached out.
Corrective Action(s): Inspector showed the operator the correct mixing ratio for bleach:water. 5ml of bleach (1/4 of the lid of the bleach bottle) per 1L of water is to be mixed to obtain 200 ppm chlorine residual. All food contact counters are to be wiped down with water and re-sanitized.

Observation (CORRECTED DURING INSPECTION): 1) Several containers are left uncovered in all coolers.
2) Dirty rags are kept on counters. Staff was noted to use these rags to wipe down counters (no sanitizer).
3) A piece of dirty cardboard was kept on the middle food preparation counter.
Corrective Action(s): 1) Ensure all containers have tight fitting lids in storage.
2) Rags were removed from counters at the time of inspection. Ensure wiping cloths are kept in sanitizer solution to prevent the growth of pathogens.
3) Cardboard was discarded at the time of inspection. Cardboard is not a food safe material. It cannot be cleaned and sanitized. All surfaces must be smooth, impervious to moisture, and easy to clean.

Observation: Operator claims to have completed their Food Safe training last year (also previously noted in the inspection reports) but has no proof of completing the course as no certificate was received in the mail.
Corrective Action(s): Keep a copy of your Food Safe level 1 certificate on site for review. Contact the agency that you completed your course with and follow-up regarding your certificate. Date to be corrected by: March 31, 2023.

Temperatures:
Standup glass door cooler is maintaining 4C
Double door back cooler is maintaining 4C
Drinks cooler (holding milk) is maintaining 4C
Freezers (2 chest freezers, 1 stand up single door) are maintaining -18C or less.
Bean sprouts were held in ice water.
Preparation cooler is maintaining 4C.

One stand up cooler is not in use at the back.

NOTE: temperature logs must be maintained to monitor temperatures of all cooling units.

Sanitation:
Low temperature dishwasher achieved 50 ppm chlorine at the dish surface after the final rinse cycle.
Bleach sanitizer spray bottle contained 100 ppm chlorine residual - after the inspector discussed bleach:water ratios *see violation above
Hand washing sink is equipped with hot and cold running water, liquid soap, and disposable paper towels.

No pest activity noted in the food handling areas.
Operator claims to have updated their Food Safe level 1 but has no copy available on site. *see violation above. This is a repeated violation*
