Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher was not equipped with sanitizer. Operator states the sanitizer will arrive the following day.
Corrective Action(s): Manually sanitize all dishes, utensils, and equipment after running them through the dishwasher.
1. Clean and sanitize one of the nearby sinks
2. Prepare 100 ppm bleach sanitizer in this sink by following the ratio of 1/2 teaspoon bleach per 1L clean water
3. After equipment comes out of the dishwasher, submerge completely in the bleach sanitizer for 2 minutes
4. Allow equipment to be air dried before using

Observation: Rodent droppings observed on the floors along the walls of the dry storage room, dishwashing area, and beer storage room. No evidence of food being contaminated by pests.
Corrective Action(s): Clean up droppings and sanitize affected areas with bleach sanitizer. Do not sweep or vacuum to avoid disturbing potentially harmful dust and debris. Arrange for pest control services and provide a service report. Date to be corrected by: Immediately

Observation: Dessert cooler maintaining ambient temperatures of 8-9C. Ice build up observed.
Corrective Action(s): Defrost the cooler and ensure the temperatures are at 4C or less before storing any perishable foods in it. If temperatures do not reach 4C or less after defrosting, arrange for repairs. Date to be corrected by: Immediately
