Hand washing station stocked with liquid soap and paper towel; hot and cold running water available at all sinks
Insert coolers at front for vegetables and meat products at 4 C or lower; glass top-down doors are closed when not busy and have it propped open only during busy times;
Undercounter cooler below warmer at 4 C or lower; beverage cooler at 4 C or lower; baby products in the beverage cooler within expiry dates; walk-in cooler at 4 C or lower; walk-in freezer at -18 C or lower
Hot holding units at 60 C or above
Three compartment sink being used for proper manual dishwashing methods
Sanitizer on site and in use at 200 ppm; third compartment at 200 ppm and spray bottle at 200 ppm; please ensure that QUAT residuals are checked regularly and have sanitizers replaced once the active sanitizing components have dissipated
Staff frequently wash hands and dispose of single use gloves after use
Temperature logs are kept for all cooler and hot holding units and updated daily
Dry storage organized and all items 6 inches off the floor; chemicals stored separate across from mop sink and away from food storage area
