All outstanding violations have been corrected in report#JCHY-CEDR7T.
-Meat slicer observed to be in sanitary condition.
-Low-temperature dishwasher measured at 100ppm chlorine final rinse. Pipes of the dishwasher serviced to stop water from leakage.
-Chlorine sanitizer bucket and chlorine spray bottle measured between 200ppm.
-All handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels. All handwashing sinks are unobstructed to ensure proper hand hygiene practices.
-All food in the stand-up coolers, preparation coolers, and stand-up freezers observed to be covered with food-grade plastic wrap or lids.
-No food observed to be thawing under room temperature. All food must be thawed under refrigeration hold at least 4C or lower or under cold running water.
-No trays of soil used to grow plants/produce observed on-site. No evidence of ant activity underneath the stand-up freezer beside the back handwashing sink observed.
-Improvement in sanitation from food debris observed underneath and around the stand-up freezer, stand-up cooler, stainless steel worktables, prep cooler, 3-compartment sink, gas stove/deep fryer area in the main kitchen, chest freezer in the dry storage area, and shelving and interior of stand-up freezer and preparation cooler.
-Exhaust hood vent observed to be cleaned and sanitized. Ensure to regularly clean and sanitize exhaust hood vent.
-Exposed wood underneath the microwave observed to be removed. All food contact surfaces must be of non-porous and easily cleanable material.
Stand-up coolers, preparation coolers measured at 4C or lower. STand-up freezers and chest freezers measured at -18C or lower.
NOTE: Ensure no growing of own produce for food production. All food must be purchased from approved sources. Ensure all food contact surfaces are cleaned and sanitized after each-use. In-use utensils must be washed and sanitized after 4 hours. Food premises must be cleaned and sanitized on a daily basis to prevent built-up of grease, food debris, and/or dust underneath all equipment.
