Follow-up inspection conducted to the routine on October 28, 2019 (RPT#: JMAA-BHEVP5). The following was noted during the inspection:
Front-of-house cream dispensers meet regulatory requirements (4C or less). Left side cream dispenser at 4C, right side cream dispenser at 3C
Walk-in cooler continues to maintain temperatures of 4C or less. Cooler was at 3C at time of follow-up inspection
Manager to add two new items to the temperature log: internal temperature of milk and cream from both dispensers are to be measured
Manager to review appropriate temperature logging protocol with all staff members, and the corrective action that needs to be taken (i.e. potentially hazardous foods (PHFs) that have been over 4C for less than 2 hours need to be transferred immediately to a functional cooler. PHFs that have been over 4C for over 2 hours must be discarded)
