306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The interior surfaces of the ice machine, where the ice drops and collects in, has mould accumulating on the walls, ceiling and tubing/mechanisms. The mould could fall/touch the ice and contaminate it.
Corrective Action(s):
Immediately wash and sanitize all the interior surfaces and mechanisms of the ice bin to remove the mould. Increase the frequency this is done, to prevent the accumulation.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
The the 3-deck oven is damaged causing the lowest door unable to tightly close; the middle door is very difficult to open and close; and the heat gaskets around the door are worn away in sections, allowing heat to escape. Temperature of the oven is unable to be maintained and may affect food reaching correct cooking temperatures.
Corrective Action(s):
Repair and/or replace the 3-deck oven so it is in working order, as per manufacturer's specifications.

Observation:
The plastic lid on the dry storage bin for "salt" is cracked and chipped. The lid is not cleanable as bacteria can live in the cracks, and there is a possibility that pieces of clear plastic could fall into salt and food.
Corrective Action(s):
Immediately replace the damaged lid with a new one, and discard the old one.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature, multi-tank conveyor dishwasher had rinse cycle temp of 69.0C (minimum required is 66C) at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles, utensil & cloth buckets had strength of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor on racks, shelves, and pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust canopies and filters are clean and were professionally serviced in August 2023. Next service and cleaning due in November 2023, as per service sticker.
- No signs of pests.
- Valid FoodSafe Level 1 certified (or equivalent course) staff present.
