Observation: Most areas of premises very clean and organized. Minor food debris accumulating in hard-to-reach areas of floor (at legs of equipment, along walls, between fridge and wall etc.
Corrective Action(s): Make sure regular cleaning includes these areas so food debris doesn't spread out to more common areas on floor.

Dishwasher at 73 C at plate.
cooling units all less than 4 C.
Freezers below -18 C.
Bleach sanitizer in sani-bucket used at bar. Measured 200+ ppm. Advised to reduce bleach by half to get to 100 to 200 ppm. Obtain chlorine test strips and use regularly to verify concentrations.
NOTE: Scented bleach on-site. Replace with non-scented bleach as the fragrances will leave residue and are not considered foodsafe. Continued use for food contact surfaces MUST include a rinse step with water. Make sure sani-bucket in kitchen located close to prep areas for ease of use.

Overall organization and sanitation pretty good at time of inspection.
