Observation (CORRECTED DURING INSPECTION): Did not detect any sanitizer in two bottles of quat sanitizer in the premises (one in refrigerated room and the other behind the veal service counter). Quat at dispenser 200ppm and wiping cloths stored in 100ppm chlorine sanitizer solution.
Corrective Action(s): Ensure quat sanitizer in spray bottles are changed as needed to ensure minimum required concentrations are maintained. Stay consistent with sanitizer and do not mix quat and chlorine sanitizer solution.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Automatic soap dispenser in refrigerated room was not working. Manager on duty placed a bottle of soap at the station and requested staff member fix the automatic soap dispenser. No issues with any other hand wash stations in the premises.
Corrective Action(s): Ensure all hand wash stations are fully equipped with soap, paper towel and hot/cold running water.

Observation: Noted broken tile behind the service counter in front of the walk in cooler. Also noted missing ceiling tiles in the refrigerated room.
Corrective Action(s): Repair/replace tiles as part of ongoing maintenance. Replace missing ceiling tiles in refrigerated room by next routine inspection.

Comments

- Premises cuts raw meat and sells prepackaged foods. Operator advised that they no longer sell any ready to eat foods since the cucina separated.
- Noted separate cutting areas for meats (pork at small service counter, chicken in the refrigerated room and stored at far end of large service counter, beef and veal at the other end and middle of the large service counter. Large portion of the beef and veal are cut at the other warehouse).
- All coolers 4C or less, Freezers -16C to -21C
- Meat cutting room 7C
- General sanitation satisfactory. No obvious signs of pest activity noted.
- Reviewed manual warewashing procedures at time of inspection. Ensure equipment is washed with soap and water, rinsed with clean water, sanitized for two minutes with 100ppm chlorine OR 200ppm quat, then air dry
- Reviewed clean in place procedures at time of inspection. Ensure equipment that is used routinely throughout the day (ie. meat slicer, band saw, grinder...etc) is taken a part and all parts are thoroughly washed and sanitized at least every 4 hours as per previous inspector/report.
