Observation (CORRECTED DURING INSPECTION): Brushes for knife cleaning at prep cooler/counter noted with food debris at the time of visit. Cleaning Schedule, 2 times daily as per kitchen staff explanation.
Corrective Action(s): Ensure all food Contact Surfaces are cleaned and sanitized at least every 2 hours. Increase/improve on cleaning/sanitizing schedule for brushes.

This inspection done by EHO student.

* The following temperatures were measured:
- Walkin freezer -18.0 deg.C
- Walkin cooler 1.0 deg.C
- 2 door under counter cooler 3.0 deg.C
- Right preparation cooler 3.0 deg.C
- Left food preparation cooler 4.0 deg.C
- Beverage cooler (front house) 4.0 deg.C
- Holt hold (meat ball sauce) 70.0 deg.C

* QUATS Sanitizer dispenser/bucket 200ppm residual concentration noted as per test strip.
* Temperature log maintained daily.
* General Sanitation is Satisfactory
* Food storage practice satisfactory --> All food stored in pest proof Containers and off the floor.
* 3 Compartment Sink with pluges in use --> Kitchen staff is able to explain manual warewashing procedure
* NO Signs of pest at the time of visit --> ABEL Pest Company report for July 2020 reviewed. No concerns noted.
* All handsinks stacked with paper towel, liquid soap, hot/cold running water.

- Alcohol based hand sanitizer provided with signage at self service station
- Social distance floor markings noted in premise
- plexiglass shied available at customer order/pay point.
