Comments

Reviewed previous inspection report with management team.
- Bar shelving painted with light coloured paint (silver) and appears more durable and cleanable gloss finish.
- Shelving in bar area much cleaner, plastic mats for glasses also much cleaner.
- updated cleaning protocol for staff in place.
**Make sure management is reviewing staff work to ensure cleaning is adequate.
- Access to dump sink provided and will be maintained. Looked ok inside cavity below drains. Continue to monitor and clean this space. Make sure there is no water build up in this area.
- Glasswasher drip pan is much cleaner, although water leakage continues.
**New glasswasher is planned and at that point the entire area below glasswasher will be assessed for leakage and water ponding. Until then make sure staff remove all ponding water and food debris at the end of the day to reduce fruit/drain fly breeding. **Review this station at next scheduled inspection.
- Provided Pest Control summary report. OK. Overall fly population significantly reduced at bar and downstairs post spray. Pest Control will continue to target fly population reduction and staff will address breeding environments as discussed.

Downstairs area looks cleaners. Ceiling tiles replaced as temporary measure until washable tiles in place. Review at next scheduled inspection.

Ice supplemented cooling of inserts on cookline much better. More full and on hourly replacement schedule. Good.
