Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods (raw meat) in undergrill drawer cooler was >4C. Internal temperatures were: raw chicken 7.5C and raw steak 8.5C.
Corrective Action(s): Chef Mgr reported product had been transferred to this cooler from the walk-in cooler 45 min ago. As product >4C for less than 2 hours, product transferred to another cooler.

Observation: - Drawer cooler under grill operating at 16.8C at time of the inspection.

Comments

- Follow up inspection completed to verify that undergrill drawer cooler is operating at 4C or colder. Per violation above, cooler requires repair/service as it is >4C. Chef Manager reported cooler temperature was monitored following the inspection on June 21 and the temperature had decreased to 4C and therefore they did not have it serviced/repaired. Chef Manager showed the temperature reading from the morning (08.00hrs) which was 3.8C. Additional follow up inspection to be completed to ensure cooler is able to maintain safe temperature even during busy times. Recommend checking temperature midday in addition to current morning/evening temperature checks.
