NOTE: the back screen door is self closing but it is not fully closing leaving about a 6" gap -this door needs close such that there is no gap for pest to enter -Operator has bought additional speed racks (holed) to assist in removing oil from the cooling foods -did not observe any improper cooling at time of inspection -Dishwasher has different pair of gloves for clean dishes and dirty dishware -Magnetic strip for cleavers clean and appears sanitized NOTE: protective film observed still on lower covers at cooking line -remove the film -clean and sanitize the stainless steel as necessary
