Observation (CORRECTED DURING INSPECTION): The glasswasher had 0 ppm Iodine. It was observed that the Iodine sanitizer bucket was empty during the inspection. The last recorded sanitizer check was at 10 pm the night before. Check in the morning prior to using the glasswasher.
Corrective Action(s): Bucket replaced, 12.5 ppm Iodine achieved.

Observation: Mouse droppings observed in the food storage room. Note that candy was noted on the floor on these areas as well.
Corrective Action(s): Pest control will return for a visit this afternoon. Clean all droppings with a 1 tsp per liter bleach solution today.

Observation: Seal all entry points for rodents. Large gap noticed at the front door. Check all doors to the exterior and install door sweeps or alternatives as needed.

Observation: The salad cooler at the end of the line had an ambient temperature of 15 C.
Corrective Action(s): Keep food on ice until it is repaired and can maintain a temperature of 4 C or colder. Follow up within 2 weeks.

Comments

-Clean underneath equipment and shelving every day to remove food debris.

All coolers were < 4 C, with the exception of the salad cooler, noted above.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher had 50 ppm chlorine.
Hand sinks supplied with hot and cold water, soap and paper towels.
Food is stored in pest proof containers.
