302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer was available for use at the start of the inspection. Staff indicate they generally do not use sanitizer for food contact surfaces unless they are washing dishes at the time. Cloths were left out on countertops.
Corrective Action(s): Bleach sanitizer made up during inspection. Cloth bucket filled; cloths placed inside. Ensure sanitizer is made up and ready to use at all times the restaurant is operational - you must be able to sanitize food contact surfaces as required (after cleaning, between different types of raw/ready-to-eat foods, after placing the bottoms of containers on countertops etc.).

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Hand sink at front of store is leaking badly. Staff do not appear to be using the sink, as the area underneath (and bowl placed under the leak) were dry. Pressure from taps is also reduced.
Corrective Action(s): Have the sink fixed and supplied with adequate hot/cold water pressure by tomorrow (22nd June 2016). Ensure staff wash hands at the remaining hand sink in the interim.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Squid was being defrosted in a bucket of water on the counter at room temperature. Squid meat was approaching ambient temperature.
Corrective Action(s): Rinsed in cold water and placed in cooler during inspection. Ensure food is thawed either in the cooler, or under cold running water. Do not thaw food out on countertops at ambient temperature.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: A plate of burnt incense was stored directly over chopped vegetables on the shelf over one counter. Several medicines and cosmetics were also stored directly beside food bins and products on this shelf.
Corrective Action(s): Remove all personal items and place in a designated staff area by the end of today (21st June 2016). Relocate incense to an area where any ash generated will not contaminate food at same time.

*General sanitation satisfactory. Some cleaning required behind and under grills/deep fryers in front area - clean these areas by Friday this week. No pest issues observed.
*Hand sinks in washrooms and back kitchen satisfactory.
*Three-compartment warewashing method in use. Dish sinks in working order.
*Vent hoods maintained in clean condition.
*Organization of raw and ready-to-eat foods satisfactory.
*Hot holding units at or above 60 C.
*Cooler and freezer temperatures (including walk-in units, sliding-door cooler and front prep line cooler) satisfactory.
*Ice machine internals could not be checked during inspection. Ensure these are cleaned and sanitized regularly according to manufacturer's instructions.
*Non-latex gloves available for food handling.
*Sneeze guards in place at front display area.
