Coolers (3) are at 4 C or colder - good.
Tapioca pearls - made every 2 hours (stored at room temperature and discarded after 2 hours).
Ok for chicken and salmon sandwiches (chicken is fully cooked, using smoked, ready-to-eat salmon).
Hand washing station has liquid soap and paper towels..
Dishwasher has a final hot water sanitizing rinse (71C inside the machine and 82 C/ 180 F on the gauge) - good.
Reviewed maintenance of the dishwasher (hard water).
Chlorine sanitizer is used on food contact surfaces that cannot go through the dishwasher (use 1 tsp domestic unscented bleach in 1 litre water to make a fresh sanitizing solution of 100-200ppm)
Today, chlorine sanitizer is a bit strong - >200ppm. Spray bottle is labelled - good..
