Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine detected at dish surface after rinse cycle of dishwasher.
Corrective Action(s): Sanitizing step must be done manually. Fill one sink with 100 ppm - 200 ppm bleach solution and ensure dishes are submerged in this solution for 2 minutes after being washed in dishwasher, then allow dishes to air dry. Bleach solution in sink must be changed every 4 hours at a minimum.

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 100 ppm
- All coolers were measured to be at or below 4C
- Freezer temperatures satisfactory
- Hot held items were above 60C
- Meat slicer is sanitized throughout the day with 100 ppm bleach solution
- Food storage was organized, off the floor, and covered
- Observed proper cooling methods being used - good
- General sanitation is good
- No signs of pest activity noted
- Temperature records well maintained
