Observation (CORRECTED DURING INSPECTION): Large chunks of pork belly measured 38 - 42 deg.C Internal temp. after 1 hour at room temp
Corrective Action: Cut large pieces of hot meat to smaller size to cool quicker.
Food must be cooled from 60 deg.C to 20 deg.C within 2 hours, and 20 deg.C to 4 deg.C within 4 hours to prevent pathogen growth

Observation (CORRECTED DURING INSPECTION): 1) Rags sitting in bowl of water.
2) Ice machine has mold and biofilm growing inside
Corrective Actions: 1) Bowl for cleaning rags adjusted to 200ppm chlorine. Cleaning rags must stay in sanitizer solution to prevent pathogen growth
2) Stop serving ice. Clean machine thoroughly before restarting use.
Ice is a food product and must be protected from contamination. Clean Ice machine at least once a month
