Comments:
-Prem cooler (top): 3.5C (bot): 1.0C.
-Glass door cooler: 2.7C.
-Upright cooler: 3.0C.
-Front display cooler: 4.0C.
-All freezers were satisfactory. Foods stored in them were frozen solid.
-Thermometers were working and available in all freezers and coolers.
-Temperature logs were available.
-3-compartment sink was equipped with sink plugs, and bleach solution.
-Sanitizer bucket and spray bottles available. Ensure spray bottle solution is diluted properly (it was too strong). Use 1 tsp bleach in 1L water, Operator remade solution, it was tested at 200ppm.
-Reviewed dishwashing procedures (manual) with operator. Recommended to post manual ware washing procedures on wall.
-General sanitation was satisfactory.
-No signs of pests were found.
-Storage of foods were adequate. Raw proteins were separated from ready-to-eat foods. All foods were 6 inches off the floor.
-Individually portion frozen foods - GOOD.
-Permit was posted conspicuously.
-Food Safe Level 1 certified staff on-duty. (Valid until 2023).
