302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Dishwasher observed lacking a detergent feed. No detergent used, never used! Operator stated she purchased that way. She thought the unit she purchased didn't require detergent due to temperature of water. Measured sanitize cycle at 71.9 C. OK.
Operator uses 2 compartment sink to wash dishes manually first, then she puts in to dishwasher for final rinse.
Only acceptable as temporary measure and only when 2 compartment sink is thoroughly cleaned up.
2) 2 compartment sink very dirty. Observed green greasy slime ring around the inner surface of sinks.
Corrective Action(s): A) Call service technician to have unit evaluated for use in premises and to make necessary changes to washing step in unit. This must be done immediately and will be audited in 72 hours from date of inspection.
B) Thoroughly clean the 2 compartment sink and implement 2 step process for washing dishes prior to placing in dishwasher for sanitizing.
**This is a temporary measure only and the correct use of the dishwasher must implemented for continued operation of restaurant.
Corrective action must be completed within three days. Send pictures to this office as confirmation work is completed. Follow up inspection to be completed as noted on report.

Observation: Ice machine observed very dirty. Pictures taken.
Corrective Action(s): Do not use ice in unit. Drain and empty ice machine immediately. Thoroughly clean and descale unit prior to operating. Take picture and send to office of work completed. Do not use until approved to use. Review on reinspection dated noted on report.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Observed build up of food debris in many areas of premises. These include walls, work surfaces, shelves, floor, under equipment, dish sinks, cooling units (inside and out), door handles etc.
Use of foil, plactic film from original equipment packaging, cardboard, newprint etc. observed all over kitchen and in cooling units as means to replace systematic cleaning and sanitation.
Corrective Action(s): A complete and thorough clean up of premises is required. Remove all coverings on work surfaces, equipment etc as discussed and implement proper cleaning protocol for continued operation of premises. This will be reviewed at follow up inspection date noted.

Observation: Boxes, containers, and equipment not used continue to be stored on-site on floor, in corners next to equipment, in storage room floor, in mop sink (making mop sink inaccessible) to a point where it is difficult or impossible to properly clean premises or equipment in premises.
Corrective Action(s): remove unnecessary items from premises to allow for proper cleaning and sanitation as discussed. This will be reviewed at follow up inspection date noted.

314 - Operator has not provided acceptable written sanitation procedures [s. 24]
Observation: Operator has no sanitation plan to note.
Corrective Action(s): Develop a written sanitation plan that can be reviewed and approved by this office. This plan will need to be followed for continued operation of premises.

Comments

Premises is very disorganized and food containers and other boxes and items on floor or piled up in certain areas of premises. Get food containers off floor and on proper shelving units.
Handsink in front area is in desperate need of cleaning and leak must be fixed.
Ensure to use only foodsafe sanitizers and soap and water on work surfaces requiring cleaning. To properly sanitize food contact surfaces use 1/2 teaspoon bleach to 1 litre of water for 100 ppm solution. There should be a designated and labelled container exclusive for use for this purpose.
