o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
-Note that dough side hand sink is slow draining, ensure that this sink drains adequately.
-Observed operator washing hands before food preparation, thank you.
o Operators had clean clothing for food preparation
o Staff/Public washrooms appear clean and are fully supplied for hand hygiene

o Approved Food Source - Food ingredients from an approved source
o Food Storage - Food is stored in covered containers. Storage in walk in cooler and freezers is very organized; First in First Out and date stamps are in use.

Maintenance and Sanitation
o Dishwasher - 100ppm Chlorine sanitizer measured
o Sanitizer bottles/buckets - have 200ppm Quats; Operator refilled with Quat cloth in sanitizer bucket, 400ppm measured.
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - there are no signs of pests at the time of inspection.
o Sanitation Plan - Operators have a sanitation plan in place
