Observation: during inspection water to facility was shut off due to service up the street. Operator implemented temporary closure during duration of water outage. - water restored during inspection - temporary hand wash station set up for kitchen staff - dishwashing ceased until water service restored - dishwasher service technician scheduled for later this afternoon to address fluctuating dishwater temperatures. - operator and dishwasher to monitor every dishwasher load and if 71 Celsius not obtained during rinse at the plate, sink sanitation with 100ppm chlorine for 2 minutes will take place for that load. Dish washer shown how to perform procedure.
