Observation (CORRECTED DURING INSPECTION): Spinach / kale bins, temperature 14 C. Produce bins placed with bins of same size with ice only in contact with base of container.
Corrective Action(s): Product discarded.

Potentially hazardous foods must be stored at 4 C or colder for food safety.

Fresh cut produce stored on ice - containers are to be placed on ice, with ice surrounding all sides of container to ensure food items remain at 4 C. Otherwise, store cut produce within cooler units available.

Observation (CORRECTED DURING INSPECTION): Sanitizer container for wiping rags 100 ppm Quaternary Ammonia.

Multiple rags in use by staff not placed in sanitizer available.

Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

All food equipment and utensils where possible are to be cleaned and sanitized after use, using the dishwasher equipment.

Dishware (blenders) are to be stored upside down to allow surfaces to air dry after cleaning and sanitizing.

Dry storage areas are overstocked. Measures are to be taken to allow for better organization of dry storage inventory such as removing items no longer needed for business operation, provide additional storage capacity or increase delivery frequency from suppliers to minimize stockpiles of product.
