Observation: 1. Collection of various colors of food debris and crumbs in pizza pan storage box.
2. Corners, behind hard to reach areas and oven tray has food debris accumulation.
3. Screen at back has broken off.
Corrective Action(s): 1 and 2: Clean all areas and maintain clean to ensure there is no accumulation that would potentially attract pests.
3. Seal screen to ensure no flies or other pests enter.

Comments

Hand wash station supplied with liquid soap and paper towels in dispensers.
Walk in cooler <4C.
Freezer <-18C.
Hot holding unit for slices, 60C surface temperature.
Bleach in supply for 2 compartment sink.
Operator described how to make bleach sanitizer; none was made during inspection as operators were not actively prepping.
Lysol spray and spray nine also available for cleaning.

Reminder to turn on line cooler well in advance and ensure that 4C is reached before placing in food.
Note that some coolers may take at least 12-24hrs to reach 4C.
Operators are using time as control for food items. Ensure these are used on toppings as soon as possible and finished within 2hrs.

No signs of pests at the time of inspection.
