Observation: Food debris and spills noted inside walk in cooler and line cooler
Corrective Action(s): Remove all items and thoroughly clean the insides of the cooler including the floor/bottom and walls. Correction date: July 5/16

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Accumulation of food debris and dirt noted throughout the premises on the floor and especially in hard to reach areas under equipment. Splatter is noted on walls and build up of grease noted around deep fryer area. The current sanitation level is unacceptable and this has been a repeated issues
Corrective Action(s): Clean the following to remove dirt, debris and grease:
-The entire floor in the kitchen including the dry storage room with particular attention given to underneath and around equipment and where floor meets walls
-Walls where food splatter is present
-Deep fryer area
-Exterior and handles of coolers and freezers
-Shelving above sinks and dishwasher where takeout containers and pitchers area stored. Note: If the surface of the shelf is no longer washable, it will need to be returned to a washable condition. (ie. painted or resealed)

Liquid soap and paper towel were available at front handwashing sink and kitchen sink *Supply paper towel dispenser to front service area

Bleach sanitizer solution (200ppm Chlorine) was present for storing wiping cloths. Ensure staff are regularly sanitizing food contact surfaces.
High temperature dishwasher achieved 73.6C in the final rinse at the dish surface.
No signs of rodent activity noted at the time of the inspection. Screen was present at the back door to keep pests out. Some ants were noted near the back door. If this issue does not improve, Pest Control services may need to be retained.
